Instructions
Boil Water for Pasta: Fill a medium pot about 2/3 full with water and bring it to a boil over high heat. Add a big pinch of salt (about 1 tablespoon) to the water—it should taste slightly salty, like the sea.
Cook the Spaghetti: Once the water is boiling, add the spaghetti. Stir gently to prevent sticking. Cook for 8–10 minutes (check the package for exact time) until “al dente” (firm but not hard). Stir occasionally.
Prepare the Sauce: While the pasta cooks, heat 2 tablespoons of olive oil in a medium saucepan over medium heat. If using garlic, peel and mince the cloves, then add them to the oil. Cook for 1 minute until fragrant (don’t let it burn). Pour in the marinara sauce, stir, and let it simmer gently for 5–7 minutes. Add a pinch of salt if needed (taste it first!).
Drain and Combine: When the pasta is done, use a colander to drain the water. Return the spaghetti to the pot or move it directly to the saucepan with the marinara. Toss the pasta in the sauce to coat evenly.
Serve: Divide the spaghetti between two plates. Sprinkle with grated Parmesan and a few torn basil or parsley leaves if you have them.
Tips for Success:
Don’t rinse the pasta after draining; the starch helps the sauce stick.
If the sauce is too thick, add a splash of pasta cooking water before draining to thin it out.
